Cast Iron Herbs de Provence Chicken

Ingredients

  • 1.5 lbs Boneless Chicken Breasts
  • 1/4 cup flour
  • 1/2 tsp paprika
  • 3 tbsp olive oil
  • 3 tbsp minced garlic
  • 2 cups red wine
  • 1 tbsp Herbs de Provence
  • Salt to taste
  • Pepper to taste
  • 1/4 large red onion sliced
  • 4 oz sliced fresh mushrooms
  • 15 ea grape tomatoes

Instructions

  • Preheat oven to 300 degrees.
  • Heat oil in a 10" Skillet over medium high.
  • Salt and pepper chicken.
  • Place flour and paprika in a large plastic bag. Add chicken and toss to coat.
  • Brown chicken on both sides. Remove to platter.
  • Add garlic and toss for a few seconds.
  • De-Glaze with the wine.
  • Add chicken back, sprinkle with herbs de Provence.
  • Place in oven and cook 2 1/2 hours or until chicken reaches 180 degrees.
  • Boil Tortellini till tender. Add Tortellini, mushrooms, onions and tomatoes to pan and cook till sauce thickens.
  • Plate chicken breasts and add Tortellini mix as desired.
