This is a nice slow cooked stew both fragrant and spicy. Adapted from one of those slow cooker recipes into cast iron for a flavor only a cast iron pot can add. Garam Masala is a very fragrant blend of spices used in Indian and  other South Asian countries. We added some curry for a bit of extra flavor, and some peas and carrots for some extra color. All in all it filled the kitchen with a delightful aroma that was hard to resist at dinner time. Pretty much a stand alone dish, it could be enhanced with some fresh bread if desired for dipping. As with any great stew, this is a slow cooked recipe so you might want to put aside some time to make. It’s well worth the wait. You’ll want to serve this in as nice and elegant dish you have on hand. Enjoy.

Instructions
  1. Combine seasonings in a small bowl and whisk.
  2. Heat oil in a large cast iron skillet till hot.
  3. Brown chicken on both sides. Remove to plate.
In a cast Iron dutch oven
  1. Heat 1 Tbsp. Oil over medium heat.
  2. Add potatoes and cook for a few minutes.
  3. Add peppers, onions, and spices and cook for a few minutes.
  4. Return chicken to pot
  5. Top with tomato sauce.
  6. Add broth and bouillon, Yogurt, peas and carrots.
  7. Cover and simmer till potatoes are fork tender.
  8. Serve in a nice bowl.
Recipe Notes

As with any good stew, simmer is the rule. Keep the heat down on the Dutch Oven and let everything mingle.
