 GRILLED CHICKEN CANNELLINI SOUP

This grilled chicken and cannellini soup adds a nice touch to traditional chicken noodle soup. You just can’t get this kind of chicken soup out of a can. Grilled chicken, vegetables, ditalini, and cannellini beans make this a hearty yet light soup. We serve ours with sliced warm bread, sliced cheese and apples, and maybe a bit of wine on the side. This is just a great family dish for anytime you get the urge for homemade soup.

Cold, dreary days call for hot soup and this grilled chicken cannellini soup makes the perfect start for a great Peasant Dinner as we like to call them. Serve with sliced warm bread, cheese and apples, maybe a glass of wine.

Instructions
  1. Season chicken breasts with seasoned salt and pepper. Grill on cast iron grill until fully cooked, let cool and cut into 1/4" cubes.
  2. In a 5 Qt. Dutch Oven, combine culinary stock, broth, chicken, seasoned salt and pepper, garlic powder and thyme. Cover and heat over medium until boiling.
  3. Reduce heat, and add vegetables. Cover and simmer for 30 minutes. Add undrained beans and simmer for an additional 30 minutes.
  4. Add noodles and simmer uncovered until cooked to desired consistency. Stir in cheese and keep warm till ready to serve.

Added a handful of Mrs. Millers noodles to the mix.
