SOURDOUGH STARTER MIX

Sourdough starter mix provides the base and leavening agent for a variety of breads, biscuits and other baked goods. Consisting of yeast, water, flour and sugar it forms a living culture which is the added to flour and water for baking. Typically speaking a starter mix uses just water and flour to create the culture. The addition of a bread friendly yeast to the starter can help discourage the growth of unfriendly yeast in the mix.

Ingredients

  • 1 Package active dried yeast
  • 1/4 cup lukewarm water to dissolve yeast
  • 2 Cups Warm water 105 degrees
  • 1 1/2 cups flour
  • 1 tbsp sugar

Instructions

  • Dissolve yeast in 1/4 cup lukewarm water and let stand several minutes.
  • Add remaining water, sugar, and flour. Cover with cloth and let stand overnight.

Notes

Depending on the container size you may have to stir down if it gets too close to the top. To keep a stock on hand, add equal amounts of flour and water to replenish it. Cover and store in the refrigerator.

Recent situations involving supply shortage and an increased interest in bread baking created empty shelves if you were looking for yeast. So this popped up on a bread baking group and I though I’d pass it along here. I haven’t tried this yet, but if you want to experiment, have at it.

Ingredients

  • 1 lb Flour Good Flour
  • 1/4 lb Brown Sugar
  • 1 tsp salt
  • 1 gallon water

Instructions

  • Add all ingredients together
  • Boil for one hour. Remove from heat.
  • When mixture is warm, bottle and cork it closed.
  • Ready for use in 24 hours.

Notes

One pint of this yeast will make 18 lbs. of bread.
