Beef Pot Roast

An adaptation of our beef and noodles recipe adding sour cream and mushrooms to the mix.

Ingredients

  • 3 lb chuck roast
  • 3 tbsp salad oil
  • 1-1/2 cups beef bouillon or stock
  • 1 ea bay leaf
  • 2 medium onions quartered
  • 2 ea carrots chopped
  • 1/2 tsp Salt
  • 1/2 tsp coarse pepper
  • 1 tbsp flour
  • 1 ea Salt and pepper to taste
  • 1-1/2 cups dairy sour cream
  • 1 cup sliced fresh mushrooms

Instructions

  • Brown beef in oil.
  • Add 1/4 cup broth, bay leaf, onions, carrots, salt, and pepper.
  • Cover and simmer 2-1/2 hours, basting with additional broth to prevent burning
  • Flour beef, turn over, and flour other side.
  • Add sour cream and mushrooms and cook uncovered for 30 minutes.
  • Serve with noodles or potatoes.
