Being summer and almost the 4’th it’s time for outdoor cooking and picnics and this Best Ever Potato Salad is a welcome side dish. It also reminds me of one of the things I detest. Store bought potato salad in a tub. This sticky, yellow, over sweetened concoction available in most stores just doesn’t do it for me. Home made is always better so here’s my recipe for a great salad adapted from The Good Housekeeping cookbook with some additional ingredients for color and taste. Make enough because second helpings are a must. You can substitute 4 Cups cooked macaroni for the potatoes for a great macaroni salad also.

  • 6 ea Red Potato's cut into chunks
  • 1/4 cup celery diced
  • 1/4 cup red onion diced
  • 1/4 cup diced green bell pepper
  • 2 tbsp Hungarian pepper diced
  • 2 tbsp red chili diced
  • 1 cup mayonaise
  • 1 tbsp cider vineger
  • 2 tsp prepared mustard
  • 1/2 tsp celery seed
  • 1 tsp Salt
  • 1/8 tsp Pepper

Instructions
  1. Boil the potatos until fork tender, drain, and mix with the vegetables. Combine mayonaise, vinegar, mustard, celery seed, salt, and pepper in a large bowel. Add potatos and vegetables and combine. Cover and let stand in refridgerator for several hours prior to serving.
