Herbs de Provence Chicken is an easy dinner to make featuring chicken breasts baked with a liberal coating of Herbs de Provence. Herbs de Provence is a mixture is a mixture of dried spices used in a number of grilled dishes as well as stew. They are typical of the Provence region of France in various combinations although there is no standard. There are a number of variations of  this dish, but I was shooting for a one pan dish along with side. In this case, some cheese tortellini, mushrooms, and cherry tomatoes pared up well with the main dish.All in all, matched with a small green side salad and some bread sticks creates an easy intimate dinner for two. Some white wine served up won’t hurt either.

  • 1.5 lbs Boneless Chicken Breasts
  • 1/4 cup flour
  • 1/2 tsp paprika
  • 3 tbsp olive oil
  • 3 tbsp minced garlic
  • 2 cups red wine
  • 1 tbsp Herbs de Provence
  • Salt to taste
  • Pepper to taste
  • 1/4 large red onion sliced
  • 4 oz sliced fresh mushrooms
  • 15 ea grape tomatoes

Instructions
  1. Preheat oven to 300 degrees.
  2. Heat oil in a 10" Skillet over medium high.
  3. Salt and pepper chicken.
  4. Place flour and paprika in a large plastic bag. Add chicken and toss to coat.
  5. Brown chicken on both sides. Remove to platter.
  6. Add garlic and toss for a few seconds.
  7. De-Glaze with the wine.
  8. Add chicken back, sprinkle with herbs de Provence.
  9. Place in oven and cook 2 1/2 hours or until chicken reaches 180 degrees.
  10. Boil Tortellini till tender. Add Tortellini, mushrooms, onions and tomatoes to pan and cook till sauce thickens.
  11. Plate chicken breasts and add Tortellini mix as desired.
