Meatloaf has always been a dinner staple as well as the butt of a lot of food jokes. From the “Christmas Stories “”Meatloaf, Beatloaf, I hate Meatloaf”” to the usual discussions on it’s lack of flavor and dryness, it’s still popular because it’s easy to make. Our meatloaf has to meet two requirements: 1) Has to be easy to make, and 2) Has to have late night sandwich capability. This recipe satisfies both. See you around midnight at the fridge :).
Ingredients
- 2 lbs Ground Chuck
- 1 pkg Onion Soup Mix
- 2 ea Eggs
- 1 cup panko bread crumbs
- 1/8 tsp Lawry's seasoned salt
- 1/8 tsp Lawry's seasoned pepper
- 2 tsp Worcestershire Sauce
Instructions
- Preheat oven to 350.
- In a large mixing bowl combine all ingredients and mix well.
- Form into two loaves and shape.
- Place trivet into cast iron skillet and spray lightly with cooking oil.
- Bake for required time and remove to cutting board to cool and slice.
Notes
Serve with small whole buttered and parsley potatoes and green beans. The skillet dripping can be turned into a nice gravy.
