Cheesy Chicken Broccoli Casserole – This dish is a sure fire family pleaser. Even for people who aren’t fond of broccoli. Manufacturers of frozen broccoli have always tried to enhance it’s appeal for the vegetable by combing it with other items. Cheese, onions, and mushrooms are welcome additions, making it a nice side dish. For this dish we’ve added everything in one skillet along with chicken for a complete dinner. So give this one a whirl and put a great dinner on the table tonight. While you can do this a variety of cookware, we, as you may guess, prefer cast iron cookware. Cheesy Chicken Broccoli Casserole

Ingredients
- 2 lbs Chicken Breasts or Thighs
- 15 oz Cheese Sauce 1 Jar
- 4 cups Frozen Broccoli
- 1 cup Frozen Pearl Onions
- 4 oz sliced mushrooms 1 can, undrained
- 1/2 tsp Salt Or to taste
- 1/8 tsp black pepper Or to taste
Instructions
- In a large cast iron skillet (12") arrange breasts and thighs. Sprinkle tops with salt and pepper. Add broccoli and pearl onions.
- Add un-drained can of mushrooms and spread over top.
- Scoop 1/2 cheese sauce over top to cover. Place in preheated 350 oven for one hour.
- Remove from oven, and scoop remaining cheese sauce over entire dish.
- Return to oven for an additional hour. Remove and check breast with thermometer. Should be at least 180 degrees. Plate and serve.
