Skillet Roasted Chicken Shawarma

Skillet Roasted Chicken Shawarma is a variation on a Shawarma which refers to a marinaded meat placed on a spit and roasted. The meat is then shaved off into a collecting pan and served in a variety of ways with various toppings, or in a sandwich. Toppings could include tomatoes, cucumber, hummus, etc. While normally a rotisserie style of cooking, not every kitchen actually has one, so we opted for a cast Iron Skillet and roasted in the oven. Since this is an Arabic dish the seasonings are pungent and flavorful and should give a nice middle east flair to the kitchen. Easy to fix, the meat should marinade for at least 24 hours before preparing.

  • 2 lbs. sliced Chicken tenderloins
  • 1/4 cup lemon juice
  • 6 minced garlic cloves
  • 1 tsp. kosher salt
  • 2 tsp. Black Pepper
  • 2 tsp. ground cumin
  • 2 tsp. Paprika
  • 1/2 tsp. turmeric
  • 1/8 tsp. ground cinnamon
  • 1/8 tsp. red pepper flakes
  • 1 large red onion quartered
  • 2 Tbsp. Parsley

Instructions
  1. Combine all ingredients except for the onions and parsley in a large bowl and mix thoroughly. Refrigerate overnight, tossing occasionally.
  2. Preheat oven to 425 degrees. Lightly oil a 12" cast iron skillet. Pour chicken and marinade into the skillet and spread out. Add onion quarters on top.
  3. Place skillet in oven and cook for 1 hour. Chicken should be slightly crusted and hot.
  4. Remove from oven and serve with side dishes.
Recipe Notes

A number of toppings can be used to plate this dish, we went the just lettuce, tomato, cucumber, and dressing. A stuffed pita is also a nice way to present the meal. Happy eating.
