CAST IRON CHEESE TORTOLLINI SOUP

This Cast Iron Tortellini Soup is a delightful takeoff on Italian wedding soup. Good, hearty, with plenty of everything. Abbondanza is the word of the day with this soup.

Ingredients

  • 4 Cups chicken broth 2 Knorr Chicken Bouillon cubes in boiling water.
  • 1/2 ea Zucchini diced thick
  • 1/2 ea Yellow Squash diced thick
  • 1 lb mild italian sausage diced thick Link sausage
  • 1/2 cup purple onion slivered
  • 1 14.5 oz can petite dice tomatoes undrained
  • 1 15.5 oz can cannellini beans undrained
  • 1 Tbsp minced garlic
  • 2 Tbsp EVOO
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 16 oz pkgs frozen precooked Tortelloni with cheese
  • 1 12 oz pkg frozen chopped spinach

Instructions

  • 1. In a 5 Qt. dutch oven, heat oil over medium heat till hot. Add garlic and sausage. Brown sausage.
  • 2. Add Zucchini, squash and onion and sautee till just tender.
  • 3. Add tomatoes and beans, add seasonings and stir.
  • 4. Add broth, stir and cover. Cover and bring to a boil Reduce heat and simmer for 1 hour.
  • 5. Add spinach and tortelloni. Bring back to a boil till pasta is just cooked.
  • 6. Reduce heat and simmer for 1/2 hour.
  • 7. Serve with warm buttered bread.
