Cast Iron Herbs de Provence Chicken

Ingredients
- 1.5 lbs Boneless Chicken Breasts
- 1/4 cup flour
- 1/2 tsp paprika
- 3 tbsp olive oil
- 3 tbsp minced garlic
- 2 cups red wine
- 1 tbsp Herbs de Provence
- Salt to taste
- Pepper to taste
- 1/4 large red onion sliced
- 4 oz sliced fresh mushrooms
- 15 ea grape tomatoes
Instructions
- Preheat oven to 300 degrees.
- Heat oil in a 10" Skillet over medium high.
- Salt and pepper chicken.
- Place flour and paprika in a large plastic bag. Add chicken and toss to coat.
- Brown chicken on both sides. Remove to platter.
- Add garlic and toss for a few seconds.
- De-Glaze with the wine.
- Add chicken back, sprinkle with herbs de Provence.
- Place in oven and cook 2 1/2 hours or until chicken reaches 180 degrees.
- Boil Tortellini till tender. Add Tortellini, mushrooms, onions and tomatoes to pan and cook till sauce thickens.
- Plate chicken breasts and add Tortellini mix as desired.
