Cast Iron Wedding Soup
We're breaking from the traditional wedding soup with this recipe. The usual nasssty little mushy meatballs have been replaced with real sausage, and the little dots of pasta replaced with the real thing. This rendition is real, home cooked, and hearty. No more fishing around for something to eat out of the bowl. In addition, we've added Andouille sausage to give this great soup flavor deserving of a great soup. Takes some time, but it's prepared slowly the good old fashioned way.

Ingredients
- 2 Each Johnsonville Swiss and Mushroom Grillers Cooked and cut into cubes
- 1/2 Each Johnsonville Andouille Sausage Diced
- 4 cups Chicken Bouillon 4 cubes, dissolved in hot water
- 32 oz Chicken Stock 1 Box
- 1 stalk celery Diced
- 1 Each Carrot Diced
- 1/8 teaspoon Thyme Dried
- 1 tablespoon Oregano Dried
- 2 tablespoons Parmesan cheese Grated
- 2 cups Fresh Spinach Washed and Chopped
- 1 1/2 cups Ditalini
- 1 can White Beans Great Northern or Cannelini
- 1 tbsp EVOO
Instructions
- Cook the two Johnsonville Grillers per package instructions. Cut and set aside. Dice the Andouille.
- Heat oil in a large Dutch Oven or WOK over medium heat till hot. Add sausage and Andouille and cook for a few minutes.
- Add stock and bouillon. Season with thyme and oregano and bring to a simmer. Add Carrots, Celery, and Onion and continue simmering for about 45 minutes.
- Add spinach, beans, cheese, and ditalini. Simmer till pasta is tender. (About 30 minutes.)
- Ladel soup into bowls. Garnish with leftover spinach. Serve with warm, fresh bread.
Notes
- Johnsonville grillers can be hard to come by. I used the cheese and mushroom style. Walmart's used to have them. You may have to look a bit. If not, try regular Italian style sausage patties.
- Likewise the Andouille. But you can substitute another brand Andouille tube steak for the Johnsonville.
