Garam Masala Chicken Stew
A Fragrant Indian inspired dish that's easy to prepare.We added a little bit of curry and some carrots for a bit of color.

Ingredients
- 6 large chicken thighs
- 5.3 oz plain yogurt
- 12 oz bag mixed peas and carrots
- 1 large potato cut into pieces
- 1/2 large purple onion sliced and rough chopped
- 8 oz tomato sauce
- 14 oz chicken broth
- 1 cup chicken boulion
- 1 yellow pepper sliced
- 1/2 tsp Salt
- 1/2 tsp black pepper
- 1 1/2 tsp ground ginger
- 2 tsp garam masala
- 1 tsp Curry
- 2 cloves minced garlic
- 2 tbsp cooking oil
Instructions
- Combine seasonings in a small bowl and whisk.
- Heat oil in a large cast iron skillet till hot.
- Brown chicken on both sides. Remove to plate.
In a cast Iron dutch oven
- Heat 1 Tbsp. Oil over medium heat.
- Add potatoes and cook for a few minutes.
- Add peppers, onions, and spices and cook for a few minutes.
- Return chicken to pot
- Top with tomato sauce.
- Add broth and bouillon, Yogurt, peas and carrots.
- Cover and simmer till potatoes are fork tender.
- Serve in a nice bowl.
Notes
As with any good stew, simmer is the rule. Keep the heat down on the Dutch Oven and let everything mingle.
