Pork Noodle Casserole
A real simple delicious casserole. Takes a few minutes to prepare and makes a nice hot dinner when you don't want to fuss.

Ingredients
- 3 -4 cups shredded pork
- 1 1/2 cups penne pasta
- 1 pkg dry pork gravy mix
- 2 cups chicken broth
- 4 oz fresh mushrooms sliced
- 1/3 cup shredded cheese
- 1/4 cup panko bread crumbs
- 1 ea Pepper to taste
Instructions
- Spread the penn on the bottom of a 10" Cast Iron skillet.
- Sprinkle dry gravy mix on top of the pasta.
- Place shredded pork evenly on top of the noodles.
- Top pork with the sliced mushrooms.
- Pour chicken broth over casserole.
- Cover and bake in a preheated 350 oven for 40 minutes.
- Remove from oven, stir, and sprinkle cheese and panko on top.
- Return to oven uncovered for 10 minutes.
- Let cool and serve.
Notes
We used whole wheat penne pasta for this as it seems to hold up better than regular for this type of dish. But it's just a matter of taste.
