Roasted Garam Masala Chicken with Potatoes and Carrots

A wonderfully pungent and mild chicken roasted with potatoes, carrots and onions. Prepared as a one pot dinner in a cast iron skillet it's easy to make and delicious.

Ingredients

  • 6 small red potatoes sliced
  • 1 large Carrot diced
  • 1/2 cup chopped red onion
  • 5 large chicken thighs
  • 1/2 cup yogurt or sour cream
  • 1/2 cup Vegetable oil
  • 4 tsp garam masala
  • 3/4 tsp ginger powder
  • 1 tsp garlic powder
  • 2 tbsp kosher salt

Instructions

  • Combine oil, garam masala, ginger, garlic, and salt.
  • Place chicken in a large plastic bag, add marinade, and rub to coat chicken. Place in refrigerator and let marinade for at least 30 minutes. Longer is better.
  • Add a little oil to the skillet, and cover bottom with the sliced potatoes. Sprinkle carrots and onions on top.
  • Arrange marinaded chicken on top of the vegetables, and roast in a preheated 400 degree oven for 1 hour. The skin should be brown, and the vegetables starting to tender.
  • Remove from oven and brush the surface of the chicken with the yogurt or sour cream.
  • Return to oven and continue roasting until the chicken is done (160 to 165 degrees). The chicken should be well browned and the juices clear.
  • Remove from oven and let sit for 10 to 15 minutes before serving.

Notes

We used the sour cream for this dish. Browned up nicely. Just keep an eye on it during the second half of the roasting. 45 minutes to an hour.
