Cast Iron Skillet Roasted Chicken

Tender, Moist Roast Chicken cooked in a cast iron skillet with bacon, green onions and Blue Cheese. Perfect Sunday dinner for the family.

Ingredients

  • 4 lb Whole Chicken
  • 1 bunch green onions
  • 3 strips bacon cut in half
  • 2 cloves garlic
  • 2 tbsp Blue Cheese
  • 1 cup baby carrots
  • 1 large purple onion to decorate
  • 1 ea Salt to taste
  • 1 ea Pepper to taste

Instructions

  • Wash and clean defrosted chicken. Apply a liberal amount of salt to cavity.
  • Stuff bird with green onions and garlic cloves reserving 3 for the topping.
  • Place bird in lightly oiled cast iron skillet. Sprinkle with salt and pepper.
  • Arrange reserved onions on top and sprinkle with blue cheese.
  • Arrange bacon on top to cover.
  • Transfer to preheated 350 oven and cook for 1 hour.
  • Remove from oven and arrange carrots and purple onions around roast.
  • Transfer back to oven and let cook an additional hour, or till skin has browned.
  • Remove from oven and transfer to cutting board. Let cool, slice and serve.

Notes

The blue cheese may be a bit harsh for some and can be omitted if desired.
