Cast Iron Skillet Roasted Chicken
Tender, Moist Roast Chicken cooked in a cast iron skillet with bacon, green onions and Blue Cheese. Perfect Sunday dinner for the family.

Ingredients

lb
Whole Chicken

bunch
green onions
3
strips
bacon
cut in half

cloves
garlic

Blue Cheese

baby carrots

large
purple onion
to decorate

Salt to taste

Pepper to taste
Instructions
Wash and clean defrosted chicken. Apply a liberal amount of salt to cavity.
Stuff bird with green onions and garlic cloves reserving 3 for the topping.
Place bird in lightly oiled cast iron skillet. Sprinkle with salt and pepper.
Arrange reserved onions on top and sprinkle with blue cheese.
Arrange bacon on top to cover.
Transfer to preheated 350 oven and cook for 1 hour.
Remove from oven and arrange carrots and purple onions around roast.
Transfer back to oven and let cook an additional hour, or till skin has browned.
Remove from oven and transfer to cutting board. Let cool, slice and serve.
Notes
The blue cheese may be a bit harsh for some and can be omitted if desired.
