Fresh Cabbage Soup

Ingredients

  • 4 oz beef round steak
  • 6 cups water
  • 1/2 tsp Lawry's seasoned salt
  • 5 slices bacon diced
  • 1 lb cabbage diced
  • 8 ea baby carrots whole
  • 2 small red potatoes sliced
  • 2 tbsp tomato paste
  • 1 cup Beef Bouillon
  • 2 tbsp flour
  • 2 tbsp butter or margarine
  • 1 tsp Salt
  • 1/4 tsp Pepper

Instructions

  • Lightly season the beef with Lawry's seasoned salt and black pepper, place in 4 cups water and bring to a boil. Reduce heat, add another dash of seasoned salt and pepper to liquid. Cover and simmer till beef is tender.
  • In Dutch Oven, render bacon over medium heat but do not crisp bacon.
  • Add onions, stir fry for 30 seconds the add cabbage and stir fry for 1 minute.
  • Add broth from beef pot, carrots, and potatoes.
  • Dice beef and add to pot along with the bouillon and tomato paste. Let simmer till potatoes are fork tender.
  • Combine butter and flour and add to the mix. Bring to a boil, reduce heat to simmer.
  • Serve.

Notes

Cabbage lovers might want to bump the cabbage up to 1-1/2 lbs. It seems to be the first to disappear from the plated dish. A handful of rolled dumplings also adds a nice touch, and some fried piergoi on the side makes this a winner meal.
