Beef Pot Roast
An adaptation of our beef and noodles recipe adding sour cream and mushrooms to the mix.

- 3 lb chuck roast
- 3 tbsp salad oil
- 1-1/2 cups beef bouillon or stock
- 1 ea bay leaf
- 2 medium onions quartered
- 2 ea carrots chopped
- 1/2 tsp Salt
- 1/2 tsp coarse pepper
- 1 tbsp flour
- 1 ea Salt and pepper to taste
- 1-1/2 cups dairy sour cream
- 1 cup sliced fresh mushrooms
Brown beef in oil.
Add 1/4 cup broth, bay leaf, onions, carrots, salt, and pepper.
Cover and simmer 2-1/2 hours, basting with additional broth to prevent burning
Flour beef, turn over, and flour other side.
Add sour cream and mushrooms and cook uncovered for 30 minutes.
Serve with noodles or potatoes.
