Garam Masala Chicken Stew

A Fragrant Indian inspired dish that's easy to prepare.We added a little bit of curry and some carrots for a bit of color.

Ingredients

  • 6 large chicken thighs
  • 5.3 oz plain yogurt
  • 12 oz bag mixed peas and carrots
  • 1 large potato cut into pieces
  • 1/2 large purple onion sliced and rough chopped
  • 8 oz tomato sauce
  • 14 oz chicken broth
  • 1 cup chicken boulion
  • 1 yellow pepper sliced
  • 1/2 tsp Salt
  • 1/2 tsp black pepper
  • 1 1/2 tsp ground ginger
  • 2 tsp garam masala
  • 1 tsp Curry
  • 2 cloves minced garlic
  • 2 tbsp cooking oil

Instructions

  • Combine seasonings in a small bowl and whisk.
  • Heat oil in a large cast iron skillet till hot.
  • Brown chicken on both sides. Remove to plate.

In a cast Iron dutch oven

  • Heat 1 Tbsp. Oil over medium heat.
  • Add potatoes and cook for a few minutes.
  • Add peppers, onions, and spices and cook for a few minutes.
  • Return chicken to pot
  • Top with tomato sauce.
  • Add broth and bouillon, Yogurt, peas and carrots.
  • Cover and simmer till potatoes are fork tender.
  • Serve in a nice bowl.

Notes

As with any good stew, simmer is the rule. Keep the heat down on the Dutch Oven and let everything mingle.
