Cheesy Chicken Broccoli Casserole
This simple one pan dish featuring chicken, broccoli, and cheese will please those who don't like broccoli. Short preparation time and engage in other activities while it cooks.

- 2 lbs Chicken Breasts or Thighs
- 15 oz Cheese Sauce 1 Jar
- 4 cups Frozen Broccoli
- 1 cup Frozen Pearl Onions
- 4 oz sliced mushrooms 1 can, undrained
- 1/2 tsp Salt Or to taste
- 1/8 tsp black pepper Or to taste
In a large cast iron skillet (12") arrange breasts and thighs. Sprinkle tops with salt and pepper. Add broccoli and pearl onions.
Add un-drained can of mushrooms and spread over top.
Scoop 1/2 cheese sauce over top to cover. Place in preheated 350 oven for one hour.
Remove from oven, and scoop remaining cheese sauce over entire dish.
Return to oven for an additional hour. Remove and check breast with thermometer. Should be at least 180 degrees. Plate and serve.
