Pork Noodle Casserole

A real simple delicious casserole. Takes a few minutes to prepare and makes a nice hot dinner when you don't want to fuss.

Ingredients

  • 3 -4 cups shredded pork
  • 1 1/2 cups penne pasta
  • 1 pkg dry pork gravy mix
  • 2 cups chicken broth
  • 4 oz fresh mushrooms sliced
  • 1/3 cup shredded cheese
  • 1/4 cup panko bread crumbs
  • 1 ea Pepper to taste

Instructions

  • Spread the penn on the bottom of a 10" Cast Iron skillet.
  • Sprinkle dry gravy mix on top of the pasta.
  • Place shredded pork evenly on top of the noodles.
  • Top pork with the sliced mushrooms.
  • Pour chicken broth over casserole.
  • Cover and bake in a preheated 350 oven for 40 minutes.
  • Remove from oven, stir, and sprinkle cheese and panko on top.
  • Return to oven uncovered for 10 minutes.
  • Let cool and serve.

Notes

We used whole wheat penne pasta for this as it seems to hold up better than regular for this type of dish. But it's just a matter of taste.
