CAST IRON SKILLET SOURDOUGH BREAD
A great homemade bread brings out the best in any kitchen.
Sourdough bread has enjoyed a long and colorful history in the bread baking world and survives today as an artesian favorite. This cast iron skillet sourdough bread adds yellow cornmeal to the mix adding some body and color to it’s rich yeasty flavor. You’ll need a starter culture ( ours is here ) to duplicate this recipe as well as other sourdough recipes such as pancakes and biscuits. This bread takes some time to prepare but is well worth the effort and refrigerates particularly well ( If there’s any leftover ). If you’re a bread baking fanatic, forget the automatic bread baker, break out the mixing bowl and whip a batch up.
If you’re interested in more information about sourdough bread, check out the wikipedia article available here. While many equate sourdough bread with Northern California’s colorful history as well as the Klondike Gold Rush, it’s interesting to note that it’s origins go back as far as 1500 BC as a standard leavening agent until replaced by mixtures employed in the beer brewing process. It’s rich history coupled with the fact that it makes great sandwiches and other goodies makes an ideal bread to have on hand. If you do decide to give this a try just remember to keep an eye on the starter as it has to be replenished to keep it active. This can be as challenging as making the bread, but it’s well worth the effort.
